Intensive Cheesemaking Course by Graham Redhead

Graham Redhead is bringing his nationally renowned cheese making skills to Brisbane for two days of intensive, but delicious, cheesy fun. His passion for cheese is truly contagious, as participants who have attended his cheesemaking classes will testify.

Thirty years of experience in the dairy industry, coupled with formal qualifications in Dairy Technology, Food Technology and Business Management, gives Graham a vast knowledge of the cheese and the dairy industry. He has provided technical advice to commercial manufacturers for over 20 years and developed Australia’s first Farmhouse Cheesemaking course for commercial manufacturers in 1997, which is the predecessor of Graham’s current courses.

Graham now conducts cheesemaking courses all over Australia so that more people have the opportunity to experience the enjoyment of producing their very own exquisite gourmet cheeses at home.

Get hands on!

Each course is 100% hands-on; there are no "teacher only" demonstrations. Participants process each cheese from start to finish over the two days, using old fashioned traditional cheese making techniques. Only the freshest available milks and ingredients are used at our courses.

Our budding cheese makers are provided with a treasured “Master Cheesemaking” certificate which they can take home and frame as a reminder of their accomplishments. They will also, of course, have an esky full of hand crafted cheeses that they’ve made throughout the two days, including:

  • Cheddar
  • Italian style fresh mozzarella
  • Creamy Brie
  • Tangy quark (a versatile, low fat cream cheese for either savoury or sweet use)
  • Robust Greek style feta
  • Whole milk ricotta
  • Traditional whey ricotta
  • Persian feta for marinating in your favourite oil and herbs
  • Gourmet feta to eat fresh

Most importantly of all, cheese making students will have a very thorough knowledge of how to make hundreds of types of cheese from their own home.
